Adds PostHog analytics snippet to default layout, gated on site.posthog_api_key in _config.yml. Keeps existing Plausible snippet for backward compatibility until PostHog is confirmed working. Part of ErikBjare/bob#758 — Erik prefers consolidating on a single analytics stack (PostHog) over maintaining Plausible.
