docs: correct the 3.5.0 changelog date to the release date - #66

The entry was dated 2026-09-21 but the release ships 2026-09-22. Corrected before building so the published sdist and wheel carry the right date -- PyPI versions are immutable, so this cannot be fixed after upload.
