ci: require the catalog-wide UnoSim authoring gate - #5

Pin the compatible UnoSim commit to 5042bd03 (MoDevIO/UnoSim#149). From it on, the Course Content gate also checks every Topic that any Example activates: a learner who answers every planned question successfully must reach Topic mastery. The current content passes; the defect fixed in #4 would now fail CI. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
