fix(deps): port the Anthropic provider to anthropic-sdk-go v2
e1b26e9 
v2 makes MessageParam a union of per-role types, so the conversation
cache anchor now reads a built message's blocks through the user or
assistant variant, and the tests read them the same way.

v2 also changes three request defaults. The provider and the model
Lister now hold the previous wire explicitly:

- anthropic-version stays 2023-06-01 instead of the SDK's 2026-10-21.
- The key rides x-api-key instead of Authorization: Bearer, which
  gateways and composition's transports expect for this protocol.
- The SDK's OpenTelemetry spans and trace-context injection are off,
  so a process-global tracer or propagator no longer adds traceparent.

A new test pins all three and fails against the SDK defaults.

chore(deps): settle module metadata after the anthropic-sdk-go v2 tidy

Root resolves provider/anthropic through a local replace, so it only
picks up the v2 SDK's new indirect requirements on a second tidy pass.
Commit the settled state that task tidy produces in CI.
