Retain expanded Extract latency and state transitions

The v2 Extract provider currently discards service latency and state transitions, leaving saved benchmark results without a breakdown of job execution. Request both fields on every poll and retain them unchanged in raw and normalized results. Missing or null telemetry remains valid.

Validation

• 80 Extract provider tests passed, including mocked multi-poll responses with present, absent, and null telemetry.
• Verified existing metadata, Parse job identity, project scoping, and serialized result retention.
• Ruff lint and formatting checks; git diff --check.

No live inference requests were made.
