Update the examples to install R from the Posit Open apt repository
instead of downloading it with rstd.io/r-install.

The managed-dependencies example registers Open explicitly and does not
register the unnecessary Posit Pro repository. The matrix example keeps
its hand-written Open setup and likewise disables Pro registration. The
extending R example is updated to use Open for both pinned R versions,
and the installation guidance is updated for Open's per-minor-line
version retention.

The managed-dependencies R pin is updated from 4.5.2 to 4.6.1, and the
extending example's pin is updated from 4.5.1 to 4.5.3 because older patch
versions are no longer retained by Open. This repository has no 2026.09
release directory; its existing example outputs are updated in place.
