Update `docs/` folder to reflect updated APIs

#723 made multiple breaking changes to shipping API. We should update the docs/ folder in this repro to reflect those changes after the API docs website gets updated.

I ran a full audit over the docs vs. the public API surface and no discrepancies were found anymore.
