Remove Intel macOS runner from release workflow - #13

The macos-13 job never got a runner on the v0.1.0 tag run and was cancelled after 24 hours, so publish was skipped. Build Linux x86_64 and macOS arm64 only, matching what v0.1.0 shipped. This PR removes the Intel macOS (x86_64-apple-darwin) target from the release workflow, keeping only Linux x86_64 and macOS arm64 as the two native release targets.
