What changed in this PR
Adds Anthropic and OpenAI to the allowed providers while keeping Copilot as the default model.
Changes:
- Allows both providers and passes their API keys through Compose.
- Documents authentication and extends provider-policy and login-method checks.

Why
Allows the `anthropic` and `openai` providers in the deny-all provider policy and passes `ANTHROPIC_API_KEY` and `OPENAI_API_KEY` through Compose.
Check the smoke test's assertion that both providers expose an API-key login method on 2.0.29.
Risks
Claude Pro and Max subscriptions are not supported; Anthropic only permits API keys in third-party tools. The default model stays on Copilot.
