[ROSETTA] Document MCP timeout and health environment variables

src/rosetta-mcp-server/README.md omits the implemented operator-facing timeout, Redis, watchdog, health-check, and OAuth timeout variables defined in the server configuration. Document their names, defaults, units, and valid ranges so operators can discover and tune production failure bounds without reading source.

Priority assessment: Medium. Safe defaults keep the service bounded, but missing tuning guidance impedes production diagnosis and recovery.

Findings:

• Confirmed nine implemented variables are absent from the README: ROSETTA_RAGFLOW_HTTP_TIMEOUT, ROSETTA_TOOL_TIMEOUT, three ROSETTA_REDIS_* variables, ROSETTA_INFLIGHT_WARN_THRESHOLD, two ROSETTA_HEALTHZ_* variables, and ROSETTA_OAUTH_HTTP_TIMEOUT.
• The source defaults are 60s, 120s, 5s, 2s, 30s, 30s, 5s, 10s, and 10s respectively.
• Current parsing does not enforce one common numeric range. Invalid text falls back to defaults, but positive-value handling differs by consumer. Documentation must state only verified behavior, or a follow-up must normalize validation before it claims valid ranges.
• docs/mcp/DEPLOYMENT_GUIDE.md documents REDIS_DB, but the MCP configuration source has no matching environment-variable declaration. This is a separate configuration-reference inconsistency.

Suggestions:

• Add one operator-limits table to the README's complete environment reference: variable, scope, default, unit, and actual accepted-value behavior. Link the shorter HTTP section to it instead of duplicating entries.
• Align the deployment guide with the configuration source and document Redis database selection through REDIS_URL if that is the supported mechanism.

Next steps: Add the reference and either define/enforce a uniform positive-integer policy or describe the existing per-variable behavior precisely.
