Move the SDK examples to Sentry JavaScript 11.0.0

What changed

• storefront-commerce: @sentry/nextjs 11.0.0-rc.0 -> 11.0.0. Typecheck and next build pass.
• github-harness-flue: @sentry/node 11.0.0-rc.0 -> 11.0.0. Typecheck passes. No local env, so no live run. The Flue suppressTracing workaround stays: on 11.0.0 the same code without it drops 7 of 10 spans as unsampled (tested in the workshop copy of this harness).
• mistral-support: @sentry/node 11.0.0-rc.0 -> 11.0.0. Typecheck passes. No local env, so no live run. pnpm-lock.yaml now records 11.0.0.
• Two READMEs that named the rc version now say 11.0.0.

pnpm only

Every app now commits pnpm-lock.yaml and nothing else. The four package-lock.json files were converted with pnpm import, so no resolved version changed. pnpm 11 wrote a pnpm-workspace.yaml in three apps: minimumReleaseAgeExclude for the day-old 11.0.0 packages, and in github-harness-flue an allowBuilds block that declines the postinstall scripts of @google/genai, core-js-pure, esbuild, and protobufjs. READMEs use pnpm install, pnpm typecheck, and pnpm eve.

slack-agent-eve-otel also drops the leftover agent/instrumentation.ts. eve 0.63 refuses to build while that file exists, and agent/instrumentation/ already holds its replacement.

Checks under pnpm: typecheck and lint in all five apps, next build for the storefront, eve build for both eve apps.

slack-agent-eve and slack-agent-eve-otel still pin @sentry/node 11.0.0-rc.0; the eve app moves to 11.0.0 in the eve 0.63 migration branch, not here.
