Scripts, docs and chart defaults still reference pre-1.0 or missing images #481

Some docs, scripts and chart defaults still install pre-1.0 builds or reference images that don't exist.

Scripts that fail or install 0.2.0

• create-cluster.sh in aws-setup, telemetry and operator/src/scripts/deployment-examples pins chart 0.1.0/0.1.112, which don't exist. Set 1.0.0.
• contrib/telemetry-and-cost-optimized-eks/scripts/create-cluster.sh installs from the retired classic Helm repo (frozen at 0.2.0). Switch it to OCI 1.0.0.

Docs with old versions

• Restore examples (backup-and-restore.md, restore-deleted-cluster.md) pin documentDBVersion: "0.110.0". Change to "1.0.0".
• sidecar-injector-plugin-configuration.md uses ghcr.io/microsoft/documentdb/documentdb-local:16/17 instead of ghcr.io/documentdb/documentdb-kubernetes-operator/gateway:1.0.0.
• manual-multi-cloud-deployment-guide.md uses --version 0.0.1-multi-arch. Change to 1.0.0.
