Add data tracking for Why Roman? story; reduce data tracking boilerplate

This PR does two things:

• First, it adds data tracking for the Why Roman? data story. This part of the PR isn't very exciting, as it's the same type of setup that we've used for a few data stories now
• Second, it adds functionality for automatically generating the data tracking mixin from only the Sequelize model defining the data entries. This means that the @effect/schema validation schemas (as well as the endpoints themselves) are all automatically generated from the model + getter and update functions.
