The star history charts in the READMEs are broken because the upstream star-history service can no longer fetch stargazer data from the GitHub API. Switch the charts to the community mirror at star-history.dera.page so they render again.

The star history chart on the READMEs has been broken for a while: the chart no longer renders because of GitHub stargazer API restrictions on the upstream service.
This PR points the charts to a working mirror, star-history.dera.page, so the charts render again. The fix is applied to all README variants (README.md, README-v2.md, README-v3.md, README-v4.md).
Note that this is a required fix: the chart is currently a broken image on every README.
