Problem
The generated connector environment mappings currently advertise KEY and VERSION for local sink and source configurations. Overriding KEY can rename a source after its state path was derived, so the connector may start without its saved state. VERSION is likewise an identity field rather than a runtime override.

Proposed scope
Mark key and version with #[config_env(skip)] on sink and source configuration types, and add coverage showing those names are neither parsed nor advertised. Keep the change separate from #4350 because the behavior predates that PR.
