Scanning snapshot ancestors can be helpful when it comes to validating snapshots and incremental read

Describe the solution you'd like

There was a stale PR and the ancestor implementation looks good. We can revive it: https://github.com/apache/iceberg-rust/pull/1470/changes#diff-d085eec14e2b1a947db854a46578034d612898fd1dee9d02f98d3f3457b52fe0
