Adds .github/workflows/mac-build.yml. A pull request only runs a probe job (macOS version, Xcode, Rust and the tools the build needs). The real build is started by hand (workflow_dispatch) and needs the secret SOURCE_TOKEN; the private source is cloned at build time and the build log is not printed. Not merged yet.
