Context

This PR adds the fallback modules feature to our Spring AI integration. This feature was missing before and is needed for the demo.

I will add documentation once this code PR is approved.

This targets SDK v1.

Feature scope:

  • added fallback config feature
  • added tests
    • unit
    • e2e
    • sample-app link
