fix(serverless): redact environment values in app JSON output

Summary

• JSON and YAML for an app record replace each environment variable value with [redacted]. The variable name stays. The table is unchanged.
• This covers apps show and the other commands that print an app (deploy, apps scale, stop, resume, delete, and version activate). apps env list still prints the real value.
• apps show help says where to read the value.

Test plan

• runware serverless apps show <app> --format json includes the variable name and [redacted], not the stored value
• --format yaml does the same
• --format table is unchanged
• apps env list <app> still prints the value
