Docs: update config file transport & headers behaviour

Updates the "Mixing STDIO and HTTP/SHTTP servers" section of the Installation page to reflect three behavioural changes shipped in the merged PR.

Changes:

• Explicit type/transport field now takes precedence over command/url inference, with all accepted spellings documented (stdio, http, sse, streamable-http, streamable_http, streamableHttp).
• headers (HTTP) and env (STDIO) are now preserved through import and not cleared on re-import.
