docs: use the canonical Contributor Covenant 2.1 text
GitHub reported the code of conduct as key=other/name=Other because the previous text was a trimmed variant (missing the Enforcement Guidelines and the full Attribution block), which breaks template detection. The English file is now the verbatim upstream 2.1 text with the contact placeholder filled in, so it is recognised as Contributor Covenant. The Spanish translation stays in docs/es/code-of-conduct.md.
