docs: move the Spanish code of conduct under docs/es

GitHub's community profile detection picked CODE_OF_CONDUCT.es.md as THE code of
conduct and reported it as key=other/name=Other, instead of recognising the
English file as the Contributor Covenant. Rotating the translation into
docs/es/code-of-conduct.md restores correct detection and matches the existing
docs/es convention used for the other translated guides.

Cross-references updated in CONTRIBUTING (both languages) and the pull request
template.
