fix(tests): match new ValidationTagMismatch format - #3613

Cardano node >= 11.1.0 renders the Plutus phase-2 validation error as `ValidationTagMismatch Phase2Valid` instead of `ValidationTagMismatch (IsValid True)`. Match the new format first and keep the old one as fallback for backwards compatibility.
