Rebases the ClickHouse patch onto upstream v1.2.1 (security release, CVE-2026-111497 in the decoder), from the previous pin v1.2.0 + 1 commit.

Carried via git cherry-pick -x, original author preserved:

• disable BROTLI_MODEL macro for some targets (Evgenii Kliuchnikov) — c/common/platform.h, applied unchanged.

Once merged, ClickHouse's contrib/brotli submodule is bumped to this branch head.
